Banana Bread with Yogurt Frosting
Preheat oven to 325 degrees F and grease a 9×5-inch loaf pan.
In a large bowl, whisk together the oil and honey. Add the eggs and beat well. Mash the bananas with milk and then whisk in with all the other liquid ingredients.
Add baking soda, salt, and cinnamon, and whisk to blend. Using a rubber spatula, fold in the flour and ground flax seed just until combined. Refrain from over mixing.
Evenly pour the batter into the loaf pan and sprinkle lightly with more cinnamon and bumble & butter vanilla granola.
Bake for about 55 min to an hour, or until a toothpick inserted into the center comes out clean. While the bread is baking, mix all ingredients for the frosting. Let the bread cool in the loaf pan for 30 mins before slicing and serving with frosting.
Yield: 1 loaf (9x5-inch), 6 servings

½ cup honey
1 cup mashed ripe bananas (about 2 large bananas)

1 ½ cups whole wheat flour
½ cup of bumble & butter vanilla bean granola
1 ½ cup of yogurt
½ teaspoon vanilla extract
¾ teaspoon ground cinnamon
½ tablespoon agave
½ tablespoon brown sugar
